What you need:

3 Sweet potato

Olive oil

Salt and pepper

2 tbsp butter

Garlic powder

Paprika

Salmon

1 bundle of Asparagus

2 cups Cottage cheese

Optional: 2-3 pieces Bacon, Shredded cheddar cheese

Creating the Perfect Roasted Sweet Potato

Give your sweet potatoes a good wash, then poke a few holes in each one with a fork (this helps them cook evenly and lets steam escape). Line a baking sheet with parchment paper, place the sweet potatoes on it, drizzle lightly with olive oil, and sprinkle with salt. Roast for about 45–60 minutes, or until they’re soft all the way through and easily pierced with a fork.

Buttery Seasoned Salmon and Tender Asparagus

While your sweet potatoes are roasting, prepare the seasoning mixture. In a small dish, mix together butter, salt, pepper, garlic powder, and paprika. Microwave for about 30 seconds until the butter is melted and everything blends together.

Line another baking sheet with foil. Trim the asparagus and spread it out on the pan. Drizzle with olive oil. Pat the salmon dry and place it on the same sheet. Spoon half of the butter mixture over the asparagus and use the rest to coat the salmon so everything is nicely seasoned.

Bake for about 15–20 minutes, until the salmon is flaky and the asparagus is tender.

Assemble

Once everything is cooked, slice your sweet potato down the middle and gently fluff the inside with a fork. Add about ½ cup cottage cheese to each one so it gets creamy and melts slightly into the warm potato. Optional: sprinkle bacon bits and shredded cheese.

Place the buttery salmon alongside it, and add a helping of sautéed asparagus for that gorgeous green contrast. Enjoy!
