Easy Salmon Bites and Sweet Potato with Broccolini

Crispy salmon bites paired with roasted sweet potatoes and garlicky broccolini make for a simple, balanced meal that feels both comforting and fresh. The salmon is seasoned and cooked until golden and crisp on the outside while staying tender inside. Paired with caramelized sweet potatoes, it’s a combination that hits both savory and slightly sweet notes.
This recipe is easy enough for a weeknight but flavorful enough to feel like something special. A quick homemade spicy mayo sauce ties everything together, adding just the right kick. It’s a wholesome, protein-packed dish that comes together with minimal effort while still delivering satisfying flavor.
What you’ll need:
3 Sweet potato
Olive oil
Salt & pepper
Paprika
Salmon (patted dry)
Broccolini
2–3 cloves garlic (minced)
Butter (optional)
Sauce:
Mayo
Ketchup
Hot sauce (to taste)
How to make:
Preheat oven to 400°F. Line a baking sheet with parchment paper. Place sweet potato on baking sheet. Drizzle lightly with olive oil and sprinkle with salt. Set aside
Cut salmon into 1-inch bite sized pieces. Toss in a bowl with olive oil, salt, pepper, and paprika. Spread evenly on a separate lined baking sheet.
Bake sweet potatoes: 30-45 minutes (until tender) and bake salmon: 15-20 minutes
Transfer salmon to an air fryer at 350°F for 5–7 minutes.
Heat a pan over medium-high heat with oil. Add broccolini and salt to season. cook ~4 minutes, stirring occasionally. Add garlic and cook 1–2 more minutes.
Make sauce for salmon bites. Mix mayo, ketchup, and hot sauce. Adjust spice level to heat preference.
Serve: Plate salmon bites with sauce. Add sweet potatoes (cut in half lengthwise, top with a small pad of butter if you like). Serve with broccolini. Enjoy!
