What you need:

2 Sweet potato

Olive oil

Salt and pepper

1.5 lb Ground turkey

Paprika

Mozzarella shredded cheese

Buffalo sauce

How to make:

Bake the sweet potatoes

Start by preheating your oven to 400°F.

Wash your sweet potatoes, pat them dry, and poke a few holes in each one with a fork so they can steam as they bake. Place them on a baking sheet, drizzle a little olive oil, and sprinkle with salt.

Bake for 45–60 minutes, until they’re soft all the way through and you can easily pierce them with a fork.

Make the buffalo turkey filling

While the potatoes are baking, heat a drizzle of olive oil in a skillet over medium heat.

Add your ground turkey and season with salt, pepper, and paprika. Break it up as it cooks so you get small, crumbled pieces. Cook for about 8–10 minutes, or until it’s fully cooked through and no longer pink.

Once it’s done, stir in mozzarella cheese so it melts into the turkey. Then add buffalo sauce to taste and mix everything together until it’s coated, creamy, and a little spicy.

Put it all together

When the sweet potatoes are done, let them cool for a minute or two so they’re easier to handle.
